Chef Alison has had the challenge of working with brides this year with very specific dietary specifications. Alison has embraced the culinary challenge and can accommodate any client with any special restrictions. Below are some examples of a vegan wedding menu. (Also available is a gluten-free menu)
PASSED APPETIZERS
Vegetarian dumplings served from bamboo steamer with citrus soy sipping sauce
Vegetarian “tostadas” served in mini corn tortilla cups
Assorted Bruscettas
Oven roasted tomato and roasted garlic
Green and black olive tapenade
Roasted eggplant and carmelized onion
Roasted red pepper hummus on spiced pita chip with toasted pine nut
Mini “shots” of gazpacho
Asian spiced tofu “skewers” with peanut dipping sauce
BUFFET DINNER
Eggplant rollatini(with silken tofu) with a fresh garden tomato sauce
Israeli cous cous with confetti vegetables and a white balsamic “glaze”
Grilled balsamic marinated portobellos served over crispy spinach
Sauteed kale with roasted garlic, white beans and sweet potatoes in fresh herb broth
Mixed baby greens, dried cranberries, candied walnuts and roasted beets with wild strawberry vinaigrette
Baskets of assorted breads served with herb infused olive oils on each table
